These Mediterranean Quesadillas combine fresh vegetables, flavorful feta, and gooey mozzarella cheese folded inside warm tortillas. Ready in just 15 minutes, they make a perfect quick lunch or snack with a delicious Mediterranean twist.

Ingredients

Filling

  • 1 diced tomato (grape/cherry tomatoes work best for a sweeter taste, or plum tomatoes)
  • 1/3 cup diced red onion
  • 1 cup chopped spinach
  • 1/2 cup feta cheese
  • 1 cup shredded mozzarella cheese

Main

  • 3 burrito style tortillas
  • 1-2 tablespoons oil (for cooking)

Instructions

  1. Prepare the Filling: In a medium bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix gently to evenly distribute all the ingredients.
  2. Assemble the Quesadillas: Lay each tortilla flat and spread about one-third of the filling on one half of each tortilla. Fold the tortilla over to cover the filling, forming a half-moon shape.
  3. Cook the Quesadillas: Heat a small amount of oil in a large flat pan or on a griddle over medium heat. Place one quesadilla at a time in the pan and cook for 3-4 minutes on each side. Press down gently with a spatula to ensure even browning and to help melt the cheese inside. The tortillas should be lightly browned and the cheese fully melted.
  4. Serve: Remove the quesadillas from the pan and cut each into 4 triangular slices. Serve warm with optional sides such as sour cream, salsa, or pico de gallo for added flavor.

  • You can substitute the spinach with kale or arugula if preferred.
  • For a spicier version, add a pinch of crushed red pepper to the filling.
