Marinade

  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt

Instructions

  1. Prepare the marinade: In a large plastic food storage bag, combine lemon juice, olive oil, chopped fresh parsley, crushed garlic, paprika, and dried oregano. Seal the bag and gently mix all the ingredients together.
  2. Season the chicken: Pierce each chicken breast several times with a fork to help the marinade penetrate. Sprinkle the chicken breasts evenly with salt and pepper, then place them inside the marinade bag. Seal the bag and coat the chicken thoroughly with the marinade. Refrigerate and marinate for at least 20 minutes or up to two days for maximum flavor.
  3. Grill the chicken: Remove the chicken breasts from the marinade and discard any leftover marinade. Grill or broil the chicken breasts for approximately 5 to 6 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. Alternatively, cook the chicken in a grill pan over medium-high heat, turning every 5 to 6 minutes per side until done.
