These rich and creamy Marry Me Butter Beans combine sun-dried tomatoes, herbs, and coconut cream to create an easy, flavorful vegan and gluten-free dish perfect for a comforting vegetarian lunch or dinner.

Ingredients

Vegetables & Aromatics

  • 1 large shallot, peeled & finely diced
  • 4 cloves garlic, minced
  • ⅓ cup sun-dried tomatoes marinated in oil, chopped
  • 2 tablespoons chopped fresh basil

Pantry & Seasonings

  • 2 tablespoons vegan butter
  • 1 tablespoon tomato paste
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ¼ teaspoon chili flakes
  • 15 ounces canned butter beans (1 can, with liquid included)
  • 2 tablespoons coconut cream
  • 1 tablespoon nutritional yeast
  • ½ tablespoon lemon juice
  • Salt & pepper, to taste

Instructions

  1. Prep Aromatics: Finely dice the shallots, chop the sun-dried tomatoes, and mince the garlic. Use a garlic press if available for easier mincing.
  2. Melt Butter: Add vegan butter to a large pot and melt over medium heat until sizzling.
  3. Sauté Shallots & Garlic: Add the diced shallots and minced garlic to the melted butter. Stir and sauté for about 2-3 minutes until fragrant and softened.
  4. Add Tomatoes & Spices: Stir in the chopped sun-dried tomatoes, tomato paste, dried oregano, dried thyme, and chili flakes. Sauté for another minute until well combined with the shallots and garlic.
  5. Add Beans & Cream: Pour in the canned butter beans along with their liquid (do not strain). Add the coconut cream, nutritional yeast, and lemon juice to the pot.
  6. Simmer: Stir everything and bring to a simmer. Cook for about 5 minutes to reduce some of the liquid and allow the beans to cook through, thickening the sauce.
  7. Finish & Season: Once thickened, stir in the fresh chopped basil. Season with salt and pepper according to your taste.
  8. Serve: Serve the creamy butter beans warm, ideally with a big slice of toasted bread. Enjoy your hearty vegan meal!
