Ingredients

Salmon

  • 1 lb salmon, skinned and cut into filets
  • Salt and pepper, to taste

Maple Glaze

  • ½ cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons finely chopped jalapeno, seeds removed
  • 2 teaspoons minced garlic
  • ¼ teaspoon paprika

Additional

  • 1 cup pineapple chunks (fresh preferred)

Instructions

  1. Season the salmon: Pat the salmon filets dry with paper towels and season them all over with salt and pepper. Set aside while preparing the glaze.
  2. Make the maple glaze: In a bowl, whisk together the pure maple syrup, Dijon mustard, finely chopped jalapeno, minced garlic, and paprika until well combined.
  3. Heat the glaze: Place a 10-inch skillet over medium heat and add the maple glaze mixture. Warm it gently for about 1 to 2 minutes until heated through and slightly thickened.
  4. Cook the salmon: Add the salmon filets to the skillet, skin side down. Periodically spoon the maple glaze over the top of the salmon as it cooks to keep it moist and flavorful. Cook for about 6 minutes until the salmon is mostly cooked through.
  5. Add pineapple and broil: Spread the pineapple chunks evenly over the salmon in the skillet, then transfer the skillet to the oven broiler. Broil for 1 to 2 minutes until the salmon is fully cooked and flakes easily with a fork.
  6. Glaze again for shine: Remove the skillet from the broiler once, ladle more glaze over the salmon to enhance the coating, then return to broiler briefly to set the glaze, about 1 more minute.
  7. Serve: Plate the maple glazed salmon immediately. This dish pairs wonderfully with rice and steamed broccoli for a complete meal.
