Ingredients

Chicken

Mango Salsa

  • 2 mangoes
  • ½ red or white onion, diced
  • 1 red bell pepper, diced
  • 1 bunch cilantro, chopped
  • ¼ teaspoon salt
  • Juice of 1 lime

Instructions

  1. Prepare the Mango Salsa: In a medium bowl, combine diced mangoes, diced onion, diced red bell pepper, chopped cilantro, salt, and lime juice. Stir all ingredients together gently until well mixed, then set aside to let flavors meld.
  2. Season the Chicken: Drizzle the chicken breasts with 2 tablespoons olive oil, then season both sides with salt and pepper to taste. In a small bowl, mix together cumin, chili powder, garlic powder, and Italian blend seasoning. Rub this spice mixture evenly over the chicken breasts to coat them thoroughly for maximum flavor.
