Ingredients

Dry Ingredients

  • 3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt

Wet Ingredients

  • 2 sticks unsalted butter (at room temperature)
  • 1 cup granulated sugar
  • 1 cup golden brown sugar (firmly packed)
  • 3 large eggs
  • 1 1/2 teaspoons pure vanilla extract

Add-ins

  • 1 1/2 cups M&M’s (plus more for topping)
  • 1 cup mini chocolate chips (plus more for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it reaches the perfect baking temperature.
  2. Prepare Baking Dish: Line a 9×13 inch baking dish with foil, leaving an overhang to help lift out the bars easily after baking. Spray the foil generously with nonstick cooking spray to prevent sticking.
  3. Cream Butter and Sugars: In the bowl of a stand mixer, beat the room temperature butter together with granulated sugar and brown sugar until the mixture is light and fluffy, which helps create a tender texture.
  4. Add Eggs and Vanilla: Incorporate the eggs and pure vanilla extract into the butter-sugar mixture, continuing to beat until smooth and well combined.
  5. Mix Dry Ingredients: Lower the mixer speed and gradually add the all-purpose flour, baking soda, and salt. Mix until just combined to avoid overworking the dough.
  6. Fold in M&M’s and Chocolate Chips: Stir in 1 1/2 cups M&M’s and 1 cup mini chocolate chips, reserving some of each to sprinkle on top before baking for extra color and texture.
  7. Transfer to Baking Dish: Spread the cookie dough evenly into the prepared baking dish, then press the reserved M&M’s and chocolate chips gently into the top of the dough to decorate.
  8. Bake: Place the dish in the oven and bake for 30 to 35 minutes, or until the bars achieve a light golden brown color and are just set in the center to ensure a chewy texture.
  9. Cool and Serve: Allow the cookie bars to cool completely in the pan. Use the foil overhang to lift the bars out and cut them into 18 servings to enjoy.

Notes

  • Ensure the butter is at room temperature before mixing for the best texture.
  • Do not overbake to keep the bars chewy rather than dry or crunchy.
  • Use foil with overhang for easy removal of bars from the pan.
  • These bars store well in an airtight container at room temperature for up to 5 days.
  • For a festive twist, use holiday-themed M&M’s depending on the season.
