Ingredients

Vegetables

  • 1 large sweet potato, cut into 1-inch pieces
  • 1 (12 to 14 ounce) bag stir-fry veggie kit with broccoli, carrots, and snow peas

Chicken and Seasoning

  • 6 bone-in chicken thighs
  • 1 1/2 teaspoons kosher salt, divided
  • 1 teaspoon ground black pepper, divided
  • 1 tablespoon oil

Sauce

  • 1/3 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1/8 teaspoon crushed red pepper

Instructions

  1. Preheat Oven: Set your oven to 375 degrees F (190 degrees C) to prepare for baking the dish.
  2. Toss Vegetables: In a 9×13-inch baking dish, combine the cut sweet potatoes, stir-fry veggie kit, oil, 1 teaspoon kosher salt, and 1/2 teaspoon ground black pepper. Toss well to coat the vegetables evenly with seasoning and oil.
  3. Arrange Chicken: Place the bone-in chicken thighs on top of the seasoned vegetables. Sprinkle the remaining 1/2 teaspoon kosher salt and 1/2 teaspoon black pepper over the chicken evenly.
