  • ¼ to cup extra-virgin olive oil
  • ½ teaspoon fresh or dried thyme (optional)

Instructions

  1. Combine Ingredients: In a small bowl, whisk together the lemon juice, grated garlic, Dijon mustard, sea salt, freshly ground black pepper, and honey (if using) until well mixed.
  2. Emulsify Dressing: Slowly drizzle in the extra-virgin olive oil while continuously whisking the mixture to create a smooth, emulsified vinaigrette. Alternatively, place all the ingredients in a jar with a tight-fitting lid and shake vigorously to combine.
  3. Adjust Flavor: Taste the dressing; if it is too tangy, gradually add more olive oil to mellow the flavor to your preference.
  4. Add Herbs and Final Seasoning: Stir in fresh or dried thyme if desired, and adjust salt and pepper seasoning as needed.
  5. Store Properly: Transfer the vinaigrette to a sealed container and refrigerate for up to one week. Note that the olive oil may solidify slightly when chilled; let the dressing sit at room temperature for a few minutes and stir before using.
