Delightful and chewy Kamut Marshmallow Squares made with puffed kamut cereal, mini marshmallows, and a hint of chocolate drizzle. These easy-to-make treats are perfect as back-to-school snacks or anytime you crave a sweet, crunchy bite.

Ingredients

Main Ingredients

  • 6 cups kamut puff cereal
  • 6 cups mini marshmallows
  • 3 tablespoons unsalted butter or butter alternative
  • 2 tablespoons semi-sweet chocolate chips

Instructions

  1. Prepare the dish: Spray a 9″ x 13″ baking dish generously with non-stick spray to prevent sticking.
  2. Melt marshmallows and butter: Pour about 2 inches of water into a small saucepan and bring it to a simmer. Place a large heatproof bowl over the saucepan, ensuring the bottom does not touch the water. Add marshmallows and butter to the bowl and allow them to melt together, stirring occasionally until smooth.
  3. Combine with kamut puffs: Once the marshmallow mixture is fully melted, quickly add the kamut puff cereal to the bowl. Stir thoroughly to coat all the puffs evenly with the marshmallow mixture.
  4. Press mixture into dish: Transfer the mixture into the prepared baking dish. Use a spatula or your hands (lightly greased) to press the mixture firmly and evenly into the dish. Let it cool completely to set.
  5. Melt chocolate chips: In a microwave-safe bowl, melt the chocolate chips using short 20-second bursts, stirring between intervals until smooth.
  6. Drizzle chocolate and serve: Drizzle the melted chocolate evenly over the cooled kamut marshmallow squares. Allow the chocolate to set before cutting the treats into squares. Serve and enjoy!

Notes

  • For a dairy-free option, use a butter alternative and ensure marshmallows are vegan if needed.
  • You can substitute kamut puff cereal with other puffed whole grain cereals if unavailable.
  • Press the mixture firmly into the dish to ensure the squares hold together well.
  • Store in an airtight container at room temperature for up to 3 days.
  • Microwave the chocolate cautiously in short bursts to avoid burning.
