A vibrant and flavorful Jalapeno Peach Chicken recipe featuring tender chicken thighs glazed with a sweet and spicy peach sauce, cooked on the stovetop for a quick and delicious meal.

Ingredients

Peach Glaze

  • 2 yellow peaches, pitted and sliced
  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Chicken

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

  1. Prepare Peach Glaze: In a medium bowl, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix thoroughly until the ingredients are well incorporated. Set the glaze aside.
  2. Pat Chicken Dry: Using paper towels, pat the chicken thighs dry to ensure better searing and flavor absorption.
  3. Season Chicken: In a small bowl, mix kosher salt, black pepper, and chili powder. Rub this seasoning evenly over the chicken thighs.
  4. Cook Chicken Thighs: Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat. Once hot, add the chicken thighs in a single layer (cook in batches if needed to avoid overcrowding). Sear the chicken for 5 minutes on one side, then flip and reduce heat to medium-low. Cook for an additional 5 minutes or until the internal temperature reaches 165°F. Remove chicken from the skillet and tent with foil to keep warm.
  5. Sauté Jalapenos and Peaches: Increase the heat back to medium and add the sliced jalapeno peppers to the same skillet. Cook for 3 minutes until slightly softened. Add the sliced peaches and continue cooking for another 3 minutes until the peaches soften.
  6. Add Peach Glaze: Pour the prepared peach glaze into the skillet with the peaches and jalapenos. Stir gently to coat all pieces evenly with the glaze.
  7. Reheat Chicken With Glaze: Return the cooked chicken thighs to the skillet. Spoon the peach glaze over the top of each piece. Cook for 1 to 2 minutes until the chicken is warmed through and fully coated in glaze.
  8. Serve: Remove from heat and serve the Jalapeno Peach Chicken warm for a delightful sweet and spicy main course.

Notes

  • Working in batches when cooking chicken ensures even cooking and proper searing.
  • Adjust the amount of jalapeno slices to control the spice level.
  • Use a meat thermometer to guarantee chicken is cooked safely to 165°F.
  • Peach preserves add natural sweetness, but can be substituted with fresh peach puree plus a spoon of honey if preferred.
  • Serve with rice or a light salad for a complete meal.
