This delightful Ice Cream Pie combines a crunchy chocolate graham cracker crust with creamy vanilla ice cream, fun cake chunks, and colorful sprinkles, topped with chocolate syrup and toasted almonds. Perfect for a refreshing dessert that’s easy to prepare and sure to please a crowd.

Ingredients

Crust

  • 1 1/2 cups chocolate graham cracker crumbs
  • 1/4 cup butter (melted)

Filling

  • 1 pint vanilla ice cream (softened)
  • 1 1/2 cups cake (cut into chunks)
  • 1/3 cup sprinkles

Topping

  • 1/4 cup chocolate syrup
  • 1/4 cup toasted sliced almonds

Instructions

  1. Prepare the crust: In a medium mixing bowl, combine the chocolate graham cracker crumbs with melted butter. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom and up the sides of a 9-inch pie plate to form an even crust. Place the crust in the freezer to harden for at least 15 minutes.
  2. Make the filling: In a large bowl, stir together the softened vanilla ice cream, cake chunks, and sprinkles until well combined. Spread this ice cream mixture evenly over the chocolate crumb crust. Return the entire pie to the freezer and chill for at least four hours to set properly.
  3. Add toppings and serve: Just before serving, drizzle the top of the pie with chocolate syrup and sprinkle with toasted sliced almonds for added texture and flavor.

Notes

  • Allow the ice cream to soften slightly for easier mixing and spreading.
  • Use your favorite cake flavor for the chunks to customize the pie’s taste.
  • To toast almonds, place sliced almonds in a dry skillet over medium heat, stirring frequently, until lightly browned and fragrant.
  • Keep the pie frozen until just before serving to maintain its shape and texture.
