Ingredients

Marinade and Sauce

  • 1 tablespoon olive oil
  • 3/4 cup paleo friendly BBQ sauce (unsweetened or date sweetened)
  • 3 tablespoons raw honey (melted)
  • 2 tablespoons coconut aminos
  • 1 tablespoon stone ground mustard
  • 2 teaspoons minced garlic
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

  • 1 large red bell pepper (cut into 1-inch chunks)
  • 1 yellow onion (cut into 1-inch squares)
  • Wooden or metal skewers

Instructions

  1. Prepare the marinade: In a large mixing bowl, whisk together olive oil, paleo BBQ sauce, melted honey, coconut aminos, stone ground mustard, minced garlic, salt, and pepper. Pour 1/2 cup of this mixture into a measuring cup, cover, and refrigerate for basting later. The rest will be used for marinating the chicken.
  2. Cut the chicken: On a cutting board, cut the boneless skinless chicken breasts into 1-inch chunks, slightly larger than the vegetable pieces to ensure even grilling.
  3. Marinate the chicken: Add the chicken pieces to the remaining marinade in the bowl and toss to coat evenly. Alternatively, place the chicken and marinade into a large ziplock bag and seal. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.
  4. Soak the skewers: If using wooden skewers, soak them in water for about 10 minutes before grilling to prevent burning.
