This hearty Cabbage Soup is a savory and nutritious vegetable soup featuring tender cabbage, sweet carrots, celery, and stewed tomatoes, all simmered in a flavorful broth. Ready in under 45 minutes, it’s perfect for a light yet satisfying dinner.

Ingredients

Vegetables

  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 head cabbage, chopped into 1 1/2 inch chunks
  • 4 large carrots, peeled and chopped
  • 2 ribs celery, sliced thinly
  • 14.5 ounces stewed tomatoes (or just under 2 cups fresh cut tomatoes)

Broth & Seasonings

  • 8 cups low sodium chicken broth (or vegetable broth)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon coarse ground black pepper, or to taste

Other

  • 3 tablespoons olive oil

Instructions

  1. Sauté aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic. Cook until the onions become translucent and soft, about 3 to 5 minutes, stirring occasionally to avoid burning and to release the flavors.
  2. Add broth and vegetables: Pour in the low sodium chicken broth, then add the kosher salt, black pepper, and dried thyme. Next, add the chopped cabbage, carrots, celery, and stewed tomatoes. Stir everything together to evenly combine all the ingredients.
  3. Simmer the soup: Bring the soup to a simmer and cook uncovered for 30 minutes. Stir occasionally to prevent sticking and to allow flavors to meld together, until the vegetables are tender but not mushy.

Notes

  • You can substitute chicken broth with vegetable broth to make this soup vegetarian-friendly.
  • Adjust salt and pepper to taste, especially if using regular broth instead of low sodium.
  • For added protein, consider adding cooked chicken or beans.
  • This soup stores well and tastes great the next day, perfect for meal prep.
  • For a spicier kick, add a pinch of red pepper flakes when sautéing the aromatics.
