  • 1 Tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 Tablespoons fresh garlic, minced
  • 1 lb lean ground turkey (99% lean preferred)
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 ½ cups chicken broth or vegetable stock
  • 1 28-ounce can diced or crushed tomatoes
  • 1 15-ounce can red kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 1 ½ cups frozen sweet corn

  • 2 ½ Tablespoons chili powder
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ¼ – ½ teaspoon cayenne pepper

  • Shredded cheese
  • Fresh cilantro
  • Green onion

Instructions

  1. Sauté Veggies: Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and minced garlic, cooking and stirring frequently until the onion becomes translucent and the mixture is fragrant, about 3 to 5 minutes.
  2. Cook Turkey: Add the ground turkey to the pot along with sea salt and black pepper. Use a spatula to break the meat apart and cook until it is evenly browned and cooked through, approximately 6 to 8 minutes.
  3. Add Liquids and Beans: Pour in the chicken broth or vegetable stock, then add the diced or crushed tomatoes, drained kidney beans, black beans, and frozen sweet corn. Stir well to combine.
  4. Season the Chili: Mix in the chili powder, paprika, ground cumin, dried oregano, and cayenne pepper. Stir thoroughly to evenly distribute the spices throughout the chili.
  5. Simmer: Bring the chili mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer gently for 20 minutes to allow flavors to meld together.
  6. Serve: Spoon the chili into bowls and serve warm. Top with your choice of avocado slices, sour cream or yogurt, shredded cheese, fresh cilantro, and green onion for added flavor and texture.
