Ingredients

Salmon Patties

  • 14 ounces cooked fresh salmon or canned pink salmon
  • 1 cup almond meal
  • ½ yellow onion, grated
  • 1 small zucchini, grated (about 1 cup)
  • 2 green onions, thinly chopped
  • ¼ cup fresh chives, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 eggs, whisked
  • ½ cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper

Creamy Lemon Herb Dip

  • ¾ cup Greek yogurt
  • 1/3 cup mayonnaise
  • 3 tablespoons lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 to teaspoons red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit to prepare for baking the salmon patties.
  2. Mix the patty ingredients: In a large bowl, combine almond meal, grated onion, grated zucchini, green onions, fresh chives, fresh dill, whisked eggs, parmesan cheese, olive oil, salt, and pepper. Mix well until the ingredients are thoroughly combined.
  3. Add salmon: Gently fold in the cooked fresh or canned salmon to the bowl mixture, taking care to maintain larger flakes for better texture.
  4. Form patties: Line a baking sheet with parchment paper. Using a ¼ cup measure, shape the salmon mixture into patties about 2½ to 3 inches in diameter. You can grease your hands with a small amount of cooking oil to prevent sticking.
  5. Bake the patties: Place the patties on the prepared baking sheet. Bake them in the oven for 20 to 25 minutes until the patties are puffed slightly and have a light golden color around the edges.
  6. Prepare the dip: While the patties bake, combine Greek yogurt, mayonnaise, lemon juice, lemon zest, fresh chives, fresh dill, red pepper flakes, salt, and black pepper in a bowl. Stir well and set aside.
  7. Serve: Remove the salmon patties from the oven and serve warm alongside the creamy lemon herb dip for a delicious and healthy meal.
