Ready in just 10 minutes and perfect for meal prep or on-the-go lunches.

Ingredients

Wraps

  • 3 – 8 inch Extreme Wellness wraps

Filling

  • 3 cups chopped mixed greens
  • 12 ounces cooked chopped chicken (about 2 cups)
  • 1/3 cup shredded Parmesan cheese
  • 6 tablespoons light Caesar dressing

Instructions

  1. Mix the filling: In a large bowl, combine the chopped mixed greens, cooked chopped chicken, shredded Parmesan cheese, and light Caesar dressing. Toss gently until everything is evenly coated with the dressing. Season with salt and pepper to taste.
  2. Prepare the wraps: Lay out the 8-inch Extreme Wellness wraps on a clean tray or surface. Divide the chicken and greens mixture evenly among the three wraps, placing the filling in the center of each.
  3. Roll the wraps: Fold the sides of each wrap inwards, then carefully roll each wrap up tightly from one end to the other, tucking in the ends as you go. Use your hands to pull the filling inward while you roll, being careful not to tear the wrap.
  4. Chill and serve: Wrap each rolled wrap tightly in plastic wrap and place in the refrigerator. Chill until ready to serve to allow the flavors to meld and wrap to hold its shape.

Notes

  • Use cooked chicken leftover from previous meals or store-bought rotisserie chicken to save time.
  • For added crunch and flavor, consider adding sliced cucumbers or cherry tomatoes to the filling.
  • To make it gluten-free, substitute the Extreme Wellness wraps with gluten-free tortillas.
  • Light Caesar dressing reduces fat and calorie content compared to traditional Caesar dressing.
  • Wraps can be made ahead and refrigerated for up to 24 hours; just keep them tightly wrapped to avoid drying out.
