Ingredients

  • 4 bananas, about 1 1/3 cups, mashed (320 g)
  • 1 large egg
  • 1 Tablespoon vanilla extract (15 ml)
  • 2 Tablespoons unsalted butter, melted (28 g)

Dry Ingredients

  • 3 Tablespoons light brown sugar (40 g)
  • 2 Tablespoons granulated sugar (25 g)
  • 1 teaspoon ground cinnamon (2.5 g)
  • 1 teaspoon baking powder (5 g)
  • 1 teaspoon baking soda (5 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1 1/2 cups all-purpose flour (white or whole wheat) (180 g)

Instructions

  1. Prepare Pan and Oven: Grease a standard muffin pan or line it with paper muffin liners. Preheat the oven to 350 degrees F (175 degrees C).
  2. Mash Bananas and Mix Wet Ingredients: In a mixing bowl, mash the bananas thoroughly. Add the egg, vanilla extract, light brown sugar, granulated sugar, and ground cinnamon, stirring well to combine all wet ingredients evenly.
  3. Combine Dry Ingredients: In a separate small bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt to ensure even distribution of leavening agents and seasoning.
  4. Mix Wet and Dry: Add the dry ingredients to the banana mixture and stir gently just until combined. Avoid over-mixing to maintain muffin tenderness.
