Delight in this unique and refreshing recipe of Grilled Watermelon Steaks with Feta, where smoky grilled watermelon slices are paired with salty feta cheese and fresh mint leaves. Perfect as a light appetizer or a summer side dish, this recipe offers a creative twist on traditional grilling.

Ingredients

Ingredients

  • 1 whole round watermelon (about 1500g / 52.9 oz)
  • 50 grams block feta (1.76 oz)
  • 7 medium fresh mint leaves (chiffonade)
  • Oil for the grill

Instructions

  1. Prepare the watermelon: Cut the bottom end of the watermelon, then slice it in half to create manageable portions.
  2. Trim the rind: Slice one half of the watermelon into two pieces and trim both sides of the skin and rind, leaving a slight border of flesh visible.
  3. Slice the watermelon: Cut these pieces into thick slices about 1 inch thick each for ideal grilling thickness.
  4. Slice remaining watermelon: Continue slicing the remaining half of the watermelon to result in a total of 12 thick slices.
  5. Dry the slices: Pat each watermelon slice dry with paper towels to remove excess moisture, ensuring better grilling results.
  6. Grill the watermelon: Heat a cast-iron grill over low heat and lightly oil the surface. Place the watermelon slices gently on the grill and cook for 2 to 3 minutes. Flip carefully and grill for another 2 minutes until grill marks appear and slices slightly soften.
  7. Serve: Transfer grilled watermelon steaks to a serving platter. Immediately top them with crumbled feta cheese and garnish with fresh chiffonade mint leaves for a flavor contrast. Serve warm.

Notes

  • Use a cast-iron grill pan or an outdoor grill for best smoky flavor.
  • Patting the watermelon dry is crucial to prevent steaming instead of grilling.
  • Adjust grilling time depending on your heat source to avoid mushy texture.
  • Fresh mint enhances the freshness and complements the salty feta well.
  • For a vegan version, substitute feta with a plant-based cheese alternative.
