These Grilled Veggie Skewers are a vibrant and flavorful way to enjoy a medley of fresh vegetables. Perfectly charred on the grill and brushed with a zesty garlic herb sauce, these skewers make a colorful and healthy appetizer or side dish ideal for summer cookouts or weeknight dinners.

Ingredients

Vegetables

  • 4 medium red onions
  • 4 medium zucchini, sliced into rounds
  • 2 red bell peppers, chopped into 1-inch pieces
  • 2 orange bell peppers, chopped into 1-inch pieces
  • 2 yellow bell peppers, chopped into 1-inch pieces
  • 2 green bell peppers, chopped into 1-inch pieces

For Brushing and Serving

  • Olive oil, for brushing
  • Balsamic vinegar, for serving

Garlic Herb Sauce

  • 1/3 cup olive oil
  • 5 cloves garlic, minced
  • 3 tablespoons fresh parsley, minced
  • 3 tablespoons fresh cilantro, minced
  • 1 teaspoon fresh rosemary, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Soak skewers: Soak 8-12 wooden skewers in water for at least 15-30 minutes to prevent them from burning during grilling.
  2. Prepare vegetables: Peel and slice each red onion in half, then cut each half into thirds to yield 6 pieces per onion. Seed and chop all bell peppers into approximately 1-inch pieces. Slice zucchini into rounds.
  3. Make Garlic Herb Sauce: In a medium bowl, whisk together the olive oil, minced garlic, parsley, cilantro, rosemary, salt, and pepper until well combined. Set aside.
  4. Assemble skewers: Thread the vegetables onto the skewers alternating between red onion, zucchini, and the various colored bell peppers. Lightly brush each assembled skewer with olive oil.
  5. Grill vegetables: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 5-8 minutes per side, turning until the vegetables are tender and have charred edges.
  6. Finish and serve: Remove the skewers from the grill. Brush them generously with the prepared garlic herb sauce and drizzle with balsamic vinegar if desired. Serve immediately and enjoy!
