Ingredients

Meat

  • 1 1/4 pounds sirloin steak, cut into 1 1/4-inch pieces

Vegetables

  • 2 bell peppers, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces

Marinade

  • 1/4 cup avocado oil (or olive oil)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, pressed or finely minced
  • 1 teaspoon coarse freshly-ground black pepper
  • 1 teaspoon fine sea salt

For Topping

  • Flaky sea salt

Instructions

  1. Make the marinade: In a medium bowl, whisk together the avocado oil, red wine vinegar, Dijon mustard, Worcestershire sauce, garlic, black pepper, and fine sea salt until the ingredients are thoroughly combined and emulsified.
  2. Marinate the steak: Place the sirloin steak pieces into a large zip-top bag or shallow bowl. Pour the prepared marinade over the steak, ensuring all pieces are evenly coated. Seal or cover and refrigerate for at least 30 minutes to allow flavors to penetrate, but no longer than 6 hours.
  3. Prep the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Thread the marinated steak pieces alternately with the cut bell peppers and red onion pieces onto the skewers, arranging evenly for balanced cooking.
  4. Grill the skewers: Preheat your grill to medium-high heat. Place the assembled skewers onto the grill grates and cook for 8 to 10 minutes, turning every few minutes. Continue until the steak pieces reach your desired doneness and the vegetables are tender and lightly charred.
  5. Serve: Remove the skewers from the grill and transfer them to a serving platter. Let them rest for about 5 minutes to allow juices to redistribute. Sprinkle flaky sea salt on top before serving for enhanced texture and flavor.

Notes

  • Soaking wooden skewers prevents burning during grilling.
  • Marinating time can be extended up to 6 hours for deeper flavor infusion.
  • Adjust grill time according to preferred steak doneness.
  • Can substitute avocado oil with olive oil if preferred.
  • Serve with side dishes such as rice, salad, or grilled vegetables for a complete meal.
