Ingredients

Butter Sauce

  • 1/2 cup unsalted butter (8 Tbsp)
  • 4 cloves garlic (smashed, not pressed)
  • 2 Tbsp lime juice (from 1 lime)
  • 2 Tbsp dill (chopped, plus more for garnish)
  • 1 tsp sea salt
  • 1/4 tsp black pepper

Salmon

  • 2 lbs salmon fillet (skin-on, cut into 6 portions)
  • Oil (for greasing grill grates)
  • Lime wedges (for serving)

Instructions

  1. Prepare the garlic lime butter sauce: In a saucepan over medium heat, melt 1/2 cup unsalted butter. Add 4 smashed garlic cloves along with 1 tsp sea salt and 1/4 tsp black pepper. Simmer for about 1 minute until fragrant. Stir in chopped dill and 2 tablespoons lime juice, then immediately remove the sauce from heat to prevent burning.
  2. Marinate the salmon: Place salmon fillets skin-side down on a platter. Spoon a third of the garlic lime butter sauce over the top of the fillets and use a brush to evenly coat the salmon. Let the salmon marinate briefly while the grill is preheating.
  3. Preheat and prepare grill: Heat your grill to medium heat, around 350˚F to 400˚F. Oil the grill grates well to prevent sticking.
  4. Grill the salmon first side: Place the salmon skin-side up onto the hot grill grates. Cover and cook undisturbed for approximately 3 minutes.
  5. Flip and finish grilling: Carefully flip the salmon over using a spatula and tongs. Brush another third of the butter sauce over the cooked side. Cover and continue to grill for an additional 2 minutes, or until the internal temperature reaches 140˚F (it will continue to rise to about 145˚F after removal from the grill).
  6. Serve: Transfer the salmon to a serving platter. Warm the remaining butter sauce if it has solidified and drizzle over the top. Garnish with fresh dill and serve alongside lime wedges for squeezing over the salmon.
