These Grilled Chicken Kabobs are a flavorful and colorful dish perfect for a quick and healthy meal. Marinated in a savory mixture of olive oil, soy sauce, honey, and garlic, then skewered with fresh bell peppers, zucchini, and red onion, these kabobs are grilled to juicy perfection and garnished with chopped parsley for a fresh finish.

Ingredients

Marinade

  • 1/4 cup olive oil
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Main Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1 inch pieces
  • 1 red bell pepper, cut into 1 inch pieces
  • 1 yellow bell pepper, cut into 1 inch pieces
  • 2 small zucchini, cut into 1 inch slices
  • 1 red onion, cut into 1 inch pieces

Garnish

  • 1 tablespoon chopped parsley

Instructions

  1. Prepare the marinade: Place olive oil, soy sauce, honey, minced garlic, salt, and pepper in a large bowl and whisk together until well combined.
  2. Marinate the ingredients: Add the chicken pieces, red and yellow bell peppers, zucchini slices, and red onion pieces to the marinade. Toss everything to coat well, then cover and refrigerate for at least 1 hour, or up to 8 hours to enhance flavor.
  3. Preheat the grill: Soak wooden skewers in cold water for at least 30 minutes to prevent burning. Preheat your grill or grill pan to medium-high heat, ready for cooking.
  4. Assemble the kabobs: Thread the marinated chicken and vegetables alternately onto the soaked skewers, ensuring even distribution for consistent cooking.
  5. Grill the kabobs: Place the kabobs on the grill and cook for 5-7 minutes on each side, or until the chicken is fully cooked and vegetables are tender and lightly charred.
  6. Garnish and serve: Once cooked, remove the kabobs from the grill, sprinkle with chopped parsley, and serve immediately while hot for a delicious meal.

Notes

  • For extra flavor, marinate the chicken and vegetables overnight if time allows.
  • If using metal skewers, soaking is not required.
  • Chicken should reach an internal temperature of 165°F (74°C) to ensure it’s fully cooked.
  • You can substitute chicken breasts with thighs for juicier results.
  • Serve with rice, pita bread, or a fresh salad for a complete meal.
