This Green Beans Almondine recipe is a classic, simple, and delicious way to serve green beans. Tender green beans are blanched and then sautéed with toasted almonds, shallots, and a bright splash of lemon juice, creating a perfect balance of flavors and textures. The toasted almonds add a delightful crunch and nuttiness, while the lemon juice provides a fresh finishing touch.

Ingredients

Vegetables

  • 12 ounces green beans, preferably haricot verts, trimmed
  • 1 shallot, thinly sliced
  • 1 garlic clove, grated

Nuts and Oils

  • 2 tablespoons sliced almonds
  • 1 tablespoon extra-virgin olive oil

Seasonings

  • ½ teaspoon sea salt, plus more for seasoning
  • ½ tablespoon fresh lemon juice
  • Freshly ground black pepper, to taste

Instructions

  1. Blanch the Green Beans: Bring a large pot of salted water to a boil and prepare a large bowl of ice water. Add the green beans to the boiling water and blanch for 2 minutes until tender-crisp. Drain and immediately immerse the green beans in the ice water to halt cooking. Drain again and pat dry with a towel.
  2. Toast the Almonds: Heat a cast-iron skillet over medium heat. Add the sliced almonds to the dry skillet and toast them for 2 to 3 minutes until they are golden brown and fragrant. Remove the almonds from the pan and set aside to prevent burning.
  3. Sauté Shallots and Green Beans: Add the extra-virgin olive oil to the skillet and adjust heat if necessary to medium-low. Add the thinly sliced shallot and ½ teaspoon sea salt, sautéing for about 2 minutes until the shallots soften.
  4. Add Green Beans and Finish Cooking: Add the blanched green beans to the skillet and sauté for an additional 2 to 4 minutes, stirring occasionally, until the green beans are heated through and tender to your liking.
  5. Add Garlic and Lemon: Remove the pan from heat and immediately add the grated garlic and fresh lemon juice, tossing the green beans to evenly distribute the flavors.
  6. Season and Serve: Taste and adjust seasoning with additional sea salt and freshly ground black pepper as desired. Transfer the green beans to a serving dish, sprinkle the toasted almonds on top, and serve immediately.

Notes

  • Blanching the green beans helps preserve their vibrant color and crisp texture.
  • Use haricot verts or thin green beans for the best texture and flavor.
  • Be careful not to burn the almonds when toasting; watch them closely and stir frequently.
  • The lemon juice added off the heat keeps the garlic flavor bright and fresh.
  • This dish pairs well with roasted meats, poultry, or as part of a vegetarian meal.
