  • ¾ cup (84 grams) almond flour
  • ¾ cup (90 grams) chickpea flour
  • 1 cup shredded cheddar cheese
  • 3 large eggs (or 4 small)
  • 1 tablespoon Dijon mustard
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • Olive oil cooking spray

Toppings

  • Sour cream or Greek Yogurt
  • Chopped tomatoes (grape or other)
  • Fresh chopped parsley or chives

Instructions

  1. Preheat waffle iron. Preheat your Belgian waffle iron according to the manufacturer’s instructions to ensure it is hot and ready for the batter.
  2. Mix ingredients. In a large bowl, thoroughly combine the broccoli rice, almond flour, chickpea flour, shredded cheddar cheese, eggs, Dijon mustard, salt, and pepper until well incorporated.
  3. Prepare waffle iron. Spray the hot waffle iron with olive oil cooking spray to prevent sticking before adding the batter.
  4. Cook waffles. Portion about ¼ of the broccoli mixture (approximately 8 ounces) for each waffle and spread it on the waffle iron. Press the top down firmly as the batter is thicker than traditional waffle batter, ensuring it compresses evenly.
  5. Repeat cooking. Cook each waffle according to your waffle iron’s directions, repeating with the remaining batter until all waffles are cooked.
  6. Serve with toppings. Just before serving, top the waffles with sour cream or Greek yogurt, chopped tomatoes, and fresh chopped parsley or chives to add freshness and flavor.

Notes

  • Broccoli rice is made by processing broccoli florets and stems in a food processor until the pieces resemble grains of rice.
  • Because the batter is thicker than normal waffle batter, pressing down the waffle iron top helps achieve even cooking and compression.
  • For meal prep, you can freeze the cooked waffles or the batter formed into patties. Freeze patties on a lined baking sheet, then wrap and store them in a freezer bag. Thaw fully before cooking in the waffle iron.
