These Garlic Parmesan Roasted Potatoes are crispy on the outside, tender on the inside, and packed with savory garlic and rich parmesan flavor. An easy and delicious side dish that pairs perfectly with any meal.

Ingredients

Potatoes

  • 48 ounces red potatoes, quartered

Seasoning

  • ¼ cup olive oil
  • 3 teaspoons minced garlic (about 3 cloves)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Cheese & Garnish

  • ½ cup grated parmesan cheese
  • Chopped parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to ensure it is ready for roasting the potatoes.
  2. Prepare Potatoes and Seasoning: In a large bowl, combine the quartered red potatoes with olive oil, minced garlic, dried oregano, salt, and black pepper. Toss them thoroughly to evenly coat every piece with the flavorful seasoning.
  3. Add Parm and Transfer: Add half of the grated parmesan cheese to the bowl and give it a brief toss. Then transfer the potatoes into a casserole dish, spreading them out evenly.
  4. Initial Bake Covered: Cover the casserole dish with tinfoil and bake in the preheated oven for 20 minutes. This allows the potatoes to cook through while keeping them moist.
  5. Remove Cover and Add More Cheese: Carefully remove the tinfoil cover, sprinkle the remaining parmesan cheese evenly over the potatoes.
  6. Final Bake Uncovered: Return the casserole dish to the oven uncovered and bake for an additional 20 minutes, allowing the potatoes to crisp up and the cheese to brown slightly.
  7. Garnish and Serve: Once roasted, remove the potatoes from the oven and garnish with freshly chopped parsley before serving hot.

Notes

  • For extra crispiness, you can increase the final uncovered baking time by 5-10 minutes but watch closely to avoid burning.
  • Red potatoes work best due to their waxy texture that crisps nicely while staying creamy inside.
  • Feel free to use fresh herbs like rosemary or thyme instead of oregano for a different flavor profile.
  • Make sure to cut the potatoes into uniform sizes to ensure even cooking.
  • Use grated parmesan cheese rather than shredded to melt evenly and create a nice crust.
