Ingredients

Chicken

  • 1 lb chicken breasts, cut into cubes
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1-2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce, enough to coat chicken

Potatoes

  • 4-5 small/medium-sized russet potatoes, peeled and cut into small cubes
  • Olive oil, enough to coat potatoes
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Topping

  • 1 cup shredded mozzarella cheese
  • Dried parsley, for garnish
  • Additional Buffalo Wild Wings Garlic Parmesan Sauce, optional for heat

Instructions

  1. Prep Potatoes: Wash, peel, and cut the russet potatoes into small cubes to ensure they cook evenly and crisp up nicely in the air fryer.
  2. Season Potatoes: Toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika. Coat well so all pieces are seasoned for maximum flavor.
  3. Air Fry Potatoes: Place the seasoned potatoes in an air fryer and cook at 400°F (204°C) for about 25 minutes, shaking the basket a couple of times during cooking to ensure even crisping.
  4. Prepare Chicken: When the potatoes are halfway done, cut the chicken breasts into cubes to prepare for cooking.
  5. Cook Chicken: Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the chicken cubes, seasoning them with salt, pepper, paprika, onion powder, and Italian seasoning. Cook until the chicken is fully cooked and golden brown.
  6. Add Garlic and Sauce: Once the chicken is cooked, add the minced garlic to the skillet and sauté briefly until fragrant. Then stir in enough Buffalo Wild Wings Garlic Parmesan Sauce to coat the chicken evenly.
  7. Combine Potatoes and Chicken: Add the crispy air-fried potatoes to the skillet with the chicken and gently stir to combine all the flavors.
  8. Add Cheese: Sprinkle the shredded mozzarella cheese over the chicken and potatoes mixture.
  9. Melt Cheese: Broil the skillet in the oven for a few minutes until the cheese is melted and bubbly. Alternatively, cover the skillet with a lid and let it sit on the stovetop until the cheese melts.
  10. Garnish and Serve: Top the dish with dried parsley and, if desired, add a little more Garlic Parmesan sauce for extra flavor and heat. Serve immediately and enjoy!

Notes

  • You can adjust the amount of garlic Parmesan sauce based on your preferred spice level and taste.
  • Make sure to shake the potatoes during air frying to ensure they cook evenly and crisp up on all sides.
  • If you don’t have an air fryer, potatoes can be roasted in the oven at 425°F (220°C) for 30-35 minutes, turning halfway through.
  • Use fresh garlic for the best flavor in the chicken, but garlic powder can be substituted if needed.
  • For a lower-fat option, you can use olive oil instead of butter when cooking the chicken.
