Ingredients

Chicken

  • 1 pound chicken tenderloins, cut into bite-size pieces
  • 1 tablespoon oil
  • ¾ teaspoon paprika
  • ¾ teaspoon poultry seasoning
  • ½ teaspoon black pepper
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • ½ cup garlic parmesan wing sauce
  • 2 cups shredded mozzarella cheese

Potatoes

  • 1 pound baby potatoes, halved
  • 1 tablespoon oil
  • ¾ teaspoon paprika
  • ¾ teaspoon poultry seasoning
  • ½ teaspoon black pepper

Instructions

  1. Prepare the chicken and potatoes: Place the chicken pieces in one bowl and the halved baby potatoes in another bowl, keeping them separate for seasoning.
  2. Oil the ingredients: Drizzle 1 tablespoon of oil onto the potatoes and 1 tablespoon of oil onto the chicken to help spices stick and enhance roasting and sautéing.
  3. Mix seasoning: Combine paprika, poultry seasoning, and black pepper in a small dish to evenly distribute on both protein and starch.
  4. Season chicken and potatoes: Sprinkle half of the seasoning mix on the chicken, then toss to coat well. Repeat with the remaining seasoning on the potatoes.
  5. Roast the potatoes: Spread the seasoned potatoes on a baking sheet or air fryer basket and roast at 400°F (204°C) for 20 minutes until tender and lightly crispy.
  6. Cook the chicken: While the potatoes roast, heat a large skillet over medium-high heat and add the chicken. Cook for 7-10 minutes, stirring occasionally, until the chicken is browned and fully cooked through.
  7. Add garlic and butter: Reduce heat to medium-low. Add butter and minced garlic to the skillet and stir until the garlic is fragrant and butter is melted, coating the chicken.
  8. Combine potatoes with chicken: Add the roasted potatoes to the skillet with the chicken, then turn off the heat. Toss to combine all ingredients thoroughly.
  9. Add garlic parmesan sauce: Pour the garlic parmesan wing sauce over the chicken and potatoes and toss again to ensure everything is coated in the flavorful sauce.
  10. Melt the cheese: Sprinkle shredded mozzarella evenly over the skillet contents. Cover the skillet with a lid and let it sit for about 5 minutes off the heat, allowing the cheese to melt perfectly.
  11. Serve: Once the cheese is melted, serve the Garlic Parmesan Chicken and Potatoes hot and enjoy a delicious, comforting meal.

Notes

  • You can substitute baby potatoes with fingerling or small red potatoes if desired.
  • For extra crispiness, use an air fryer to roast the potatoes.
  • If dairy-free, swap butter and cheese for vegan alternatives.
  • Make sure to cover the skillet when melting cheese to trap steam and melt it evenly.
  • Adjust seasoning quantities to your taste preference.
