Creamy and flavorful garlic mashed potatoes made with roasted garlic and Yukon Gold potatoes, perfect as a comforting side dish for any meal.

Ingredients

Garlic

  • 1 head garlic, whole and unpeeled
  • 1 tablespoon extra virgin olive oil

Main Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and chopped into 1-inch chunks
  • 1/2 teaspoon salt, plus more to taste
  • 1/3 cup heavy cream
  • 3 tablespoons butter

Instructions

  1. Preheat the oven: Preheat your oven to 400°F to prepare for roasting the garlic.
  2. Roast the garlic: Remove the outer papery skin of the garlic head but keep the head intact. Slice off the tops of the cloves (about 1/4 to 1/2 inch) so they are exposed. Place the garlic on aluminum foil, drizzle with olive oil, sprinkle lightly with salt, and wrap loosely. Bake for 30 to 40 minutes until cloves are soft and lightly browned. Allow to cool.
  3. Boil the potatoes: While the garlic roasts, peel and chop potatoes into 1-inch pieces. Place them in a saucepan, add 1/2 teaspoon salt, cover with cold water, bring to a boil, then reduce heat to simmer. Cook until tender, about 15 minutes.
  4. Warm the cream and melt the butter: In a small pan on low heat or microwave-safe bowl, gently warm the heavy cream and melt the butter together until combined and warm.
  5. Mash the potatoes with garlic: Drain the cooked potatoes, return them to the pot over low heat. Squeeze the roasted garlic cloves into the potatoes. Mash together using a potato masher or large fork.
  6. Add the cream and butter, then season: Pour in the warm cream and butter mixture, then mash until you reach your desired smoothness. Avoid over-mixing to prevent gummy texture. Taste and add more salt if needed.
  7. Serve and enjoy: Transfer to serving dish and serve warm as a delicious side.

Notes

  • Use Yukon Gold potatoes for a creamy texture and buttery flavor.
  • Roasting the garlic mellows its sharpness and adds depth to the mashed potatoes.
  • Warming the cream and melting the butter before mixing helps retain temperature and blends smoothly.
  • Be careful not to over-mash to avoid gummy potatoes.
  • Adjust salt to your taste preference.
