This Garlic Baked Brie Cheese with Roasted Tomato & Thyme is a rich and savory appetizer that combines creamy melted brie with the sweet and tangy flavors of oven-roasted cherry tomatoes and garlic. Ingredients

Cheese

  • 1 wheel (8 ounces) Brie cheese

Vegetables & Herbs

  • 1 whole head of garlic
  • 1 pint (10-12 ounces) cherry tomatoes
  • 6 sprigs fresh thyme

Seasonings & Oils

  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 squeeze fresh lemon juice

Instructions

  1. Preheat and Prep Garlic & Tomatoes: Preheat your oven to 375°F (190°C). Place the cherry tomatoes in an oven-safe dish or baking sheet. Cut the top off the head of garlic to expose the cloves. Drizzle 2 tablespoons of olive oil over the tomatoes and the exposed garlic. Cover the garlic head tightly with aluminum foil. Sprinkle the sea salt and ground black pepper over the tomatoes. Place the dish in the oven and roast for about 40 minutes until the tomatoes and garlic are soft, roasted, and aromatic.
  2. Prepare the Brie: While the tomatoes and garlic roast, remove the brie from its wooden box and take off any plastic wrapping. Keep the brie cold to make it easier to cut. Using a sharp knife, carefully cut 1-inch deep small slits in a crisscross pattern on the top rind of the brie, slicing horizontally and vertically to create a grid-like pattern for the garlic to go into.
  3. Mash Roasted Garlic: Once the tomatoes and garlic are roasted, take the dish out of the oven and carefully remove the aluminum foil from the garlic. The garlic cloves should be golden brown and soft. Use tongs to gently squeeze the bottom of the garlic head, pushing out the softened cloves. Transfer these roasted garlic cloves to a bowl and mash them with a fork until you get a chunky, thick paste.
  4. Stuff Garlic into Brie & Bake: Spoon the mashed roasted garlic into the small slits you made on top of the brie rind, pressing the paste gently into the cuts. Place the garlic-stuffed brie into the same oven-safe dish with the roasted tomatoes. Return it to the oven and bake for an additional 15-20 minutes, or until the brie is fully melted and bubbly.
  5. Finish and Serve: Remove the baked brie and tomatoes from the oven. Transfer the brie to a serving platter. Add a fresh squeeze of lemon juice over the top and garnish with the sprigs of fresh thyme. Serve warm alongside crusty bread or crackers and enjoy the rich, savory flavors.
