Ingredients

  • 5 cups shredded green cabbage
  • 2 cups shredded red cabbage (or more green cabbage)
  • 1 cup shredded carrot (or more cabbage)

Dressing Ingredients

  • 1/4 cup cider vinegar
  • 2 tbsp oil (vegetable, canola, or light olive oil)
  • 1 1/2 – 2 tbsp white sugar (adjust to taste)
  • 1 tsp Dijon mustard
  • 1/2 tsp salt

Instructions

  1. Prepare the Dressing: In a jar or small bowl, combine cider vinegar, oil, white sugar (start with 1 1/2 tablespoons), Dijon mustard, and salt. Shake or whisk well until the sugar dissolves and the dressing is smooth.
  2. Combine Salad Ingredients: Place the shredded green cabbage, red cabbage, and carrot in a large mixing bowl.
  3. Toss Salad with Dressing: Pour the prepared dressing over the salad ingredients and toss thoroughly to ensure everything is evenly coated.
  4. Rest and Serve: Let the salad sit and marinate for about 20 minutes. During this time, the cabbage will soften slightly and release juices, reducing the volume by nearly half. Serve chilled or at room temperature.
