They offer a low-carb, nutrient-rich alternative to traditional egg muffins, perfect for meal prep or a quick protein-packed meal.

Ingredients

Vegetables and Aromatics

  • 1 tbsp olive oil
  • 1 cup thinly sliced onions
  • 2 cups cooked spaghetti squash (approximately ½ a medium cooked squash)
  • ¼ cup salsa

Egg Mixture

  • 5 eggs
  • ¼ cup freshly grated parmesan
  • Sea salt and pepper to taste

Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C) and line a muffin tin with paper or silicone liners to prepare for baking.
  2. Caramelize onions: Heat olive oil in a large skillet over medium-low heat. Add the thinly sliced onions, seasoning with sea salt and pepper. Cook, stirring occasionally, until onions are golden brown and caramelized, about 10 minutes.
  3. Add spaghetti squash: Stir the cooked spaghetti squash into the caramelized onions in the skillet until well combined. Remove the pan from heat and set aside to cool slightly.
  4. Mix eggs and salsa: In a large bowl, whisk the eggs thoroughly. Stir in the salsa to incorporate flavor evenly into the egg base.
  5. Combine veggies and egg mixture: Add the onion and spaghetti squash mixture to the egg and salsa mixture. Stir gently to combine all ingredients evenly.
  6. Fill muffin tin: Pour the combined mixture evenly into the prepared muffin tin cups. Sprinkle with freshly grated Parmesan cheese on top.
  7. Bake: Place the muffin tin in the preheated oven and bake for 25 to 30 minutes or until the egg bites are fully set and lightly golden.
  8. Cool and serve: Remove from oven, let cool slightly, then serve warm or store for later consumption.

Notes

  • Be sure not to overcook the onions; caramelized onions should be browned but not burnt for the best flavor.
  • Use cooked spaghetti squash that is well-drained to avoid excess moisture in the egg bites.
  • Substitute Parmesan with any grated hard cheese of your preference like cheddar or gruyere for a different flavor profile.
  • These egg bites can be refrigerated for up to 4 days and reheated in the microwave.
  • For an extra protein boost, add cooked bacon or sausage bits to the mixture before baking.
