Ingredients

Taco Shells

  • 5 large flour tortillas
  • 1 tablespoon unsalted butter (melted)
  • 13 ounces white chocolate
  • Strawberry Crunch (prepared as per recipe or purchased)

Cheesecake Filling

  • 8 ounces cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Topping

  • 2/3 cup strawberry syrup
  • 2 cups fresh strawberries (diced or halved)

Instructions

  1. Prepare Strawberry Crunch: Start by making or having your strawberry crunch ready. This crumbly topping will coat the taco shells later to add a delightful texture.
  2. Form Tortilla Shells: Using a 4-inch cookie cutter, cut 15 circles from the tortillas. Brush each circle with melted butter. Place each circle over an upside-down muffin tin cup to shape them into taco shells.
  3. Bake Tortilla Shells: Bake the shaped tortillas in a preheated oven at 350°F (175°C) for 5 to 6 minutes or until the edges turn golden. Let them cool on the muffin tin for a minute before transferring to a parchment-lined baking sheet to cool completely.
  4. Melt White Chocolate: Use a double boiler by heating about 1 inch of water in a pan until boiling, then reduce heat. Place a glass bowl with chopped white chocolate above the water, avoiding water contact. Stir constantly until melted. Alternatively, melt in microwave in short bursts of 20 seconds, stirring in between to prevent burning.
  5. Coat Taco Shells: With a brush, spread melted white chocolate on both the inside and outside of each tortilla shell. Immediately dip or coat each shell thoroughly with strawberry crunch crumbs. Place coated shells back onto a parchment-lined baking sheet and allow the chocolate to set completely.
  6. Make Cheesecake Filling: Beat softened cream cheese, powdered sugar, and vanilla extract together until smooth. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to overmix. Transfer the filling into a piping bag for easy filling.
  7. Fill the Tacos: Place the hardened chocolate-coated shells upright in an upside-down muffin tin or a 9×13 inch dish for stability. Pipe the cheesecake filling evenly into each shell.
  8. Add Toppings: Top each filled taco with fresh diced or halved strawberries and drizzle with strawberry syrup for a vibrant and flavorful finish.

Notes

  • Ensure the cream cheese is softened to prevent lumps in the cheesecake filling.
  • Be careful when melting white chocolate as it burns easily; use a double boiler or short microwave bursts.
  • Allow the chocolate coating to fully set before filling the shells to avoid breakage.
  • For a gluten-free variation, substitute flour tortillas with gluten-free tortillas.
  • Store the assembled tacos in the refrigerator and consume within 2 days for freshness.
