Ingredients

Sausages and Vegetables

  • 2 tablespoons extra virgin olive oil
  • 4 Italian sausage links (sweet, hot, or a couple of each)
  • 1 large yellow onion, sliced into 1/4-inch half-moons
  • 1 green bell pepper, sliced into 3-inch strips
  • 1 red bell pepper, sliced into 3-inch strips
  • 1 bell pepper of another color (yellow, orange, or purple), sliced into 3-inch strips
  • Salt, to taste
  • 4 garlic cloves, sliced into slivers

Tomato Sauce and Seasoning

  • 1 (15-ounce) can crushed tomatoes
  • 1 tablespoon dried oregano
  • 1/2 teaspoon red pepper flakes, optional

Instructions

  1. Brown the sausages: Heat the olive oil in a large lidded pan over medium heat. When the oil is hot, add the sausages and brown them slowly, turning occasionally to ensure even browning on all sides. Adjust heat to prevent excessive sizzling or searing. Once browned, remove sausages from the pan and set aside.
  2. Sauté the onions, peppers, and garlic: Increase heat to high. Add sliced onions and bell peppers to the pan and toss them to coat with the oil. Allow them to sear with occasional stirring until they soften and develop some blackened spots. Sprinkle salt over the vegetables. Add the sliced garlic and cook for an additional minute, stirring to combine flavors.
  3. Simmer all the ingredients: Pour in the crushed tomatoes, then add dried oregano and red pepper flakes if desired. Stir well to combine. Return the browned sausages to the pan. Bring the mixture to a simmer, then reduce heat to low, cover the pan, and cook until the peppers are tender and sausages are cooked through, about 20 minutes.
  4. Serve: Enjoy the sausage, peppers, and onions over polenta, alongside penne pasta, or loaded into hoagie rolls for a satisfying meal. Store leftovers in the refrigerator for several days.
