These Easy Peach Tartlets combine flaky puff pastry with a sweet and spiced fresh peach filling, topped with crunchy sliced almonds and a smooth vanilla glaze. Ingredients

Puff Pastry

  • 1/2 lb puff pastry dough (or 1 sheet of Pepperidge Farm brand)
  • 1 egg (beaten well with a fork)

Peach Filling

  • 1/2 lb fresh peaches (about 2 large peaches, or use canned/drained peaches)
  • 2 Tbsp granulated sugar
  • 1 Tbsp all-purpose flour
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1/4 cup sliced almonds

Vanilla Glaze

  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 Tbsp milk (or add to achieve desired consistency)

Instructions

  1. Preheat and Prepare Pastry: Preheat your oven to 400°F (204°C). Thaw the puff pastry at room temperature for about 20 minutes until you can easily unfold it. Cut the dough into 9 equal-sized squares and place them on a parchment-lined baking sheet spaced about 1 inch apart.
  2. Beat the Egg: In a small bowl, beat the egg well with a fork and set aside; this will be used to brush the pastry edges to create a golden finish.
  3. Prepare Peach Filling: Slice the fresh peaches into 1/3 inch thick slices. In a medium mixing bowl, gently combine the peaches with granulated sugar, all-purpose flour, cinnamon, and vanilla extract by folding carefully with a spatula, taking care not to crush the peach slices.
  4. Assemble Tartlets: Arrange 3 to 4 peach slices over the center of each puff pastry square, avoiding getting any peach juice on the edges. Brush the edges of each pastry square generously with the beaten egg. Sprinkle sliced almonds over the peaches and edges for a crunchy topping.
  5. Bake: Place the baking sheet on the center rack of your preheated oven. Bake the tartlets for 17-19 minutes or until the pastry is puffed and golden brown around the edges. Turn the baking sheet halfway through baking to ensure even browning. Be careful not to over-bake as the pastry can brown quickly towards the end. Once done, remove from oven and let cool on the pan for 10 minutes.
  6. Make Glaze and Serve: While the tartlets cool, prepare the glaze by stirring powdered sugar, vanilla extract, and milk in a measuring cup. Adjust the milk quantity to achieve a smooth drizzle consistency. Drizzle the vanilla glaze over the warm tartlets just before serving for an added touch of sweetness and shine.
