Ingredients

For the Cobbler Batter

  • 1/2 cup butter, divided (melted separately)

For the Filling

  • 1 (29 ounce) can sliced peaches in heavy syrup (undrained)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s hot and ready for baking the cobbler.
  2. Mix Batter: In a medium mixing bowl, coarsely combine the self-rising flour, 3/4 cup sugar, and 1/4 cup melted butter. You may add a dash of cinnamon here if desired for extra flavor.
  3. Layer Bottom Batter: Sprinkle about one-third of the flour mixture evenly across the bottom of a 9×9 inch baking dish. This layer will help thicken the peach syrup during baking.
  4. Add Peaches: Pour the canned sliced peaches with their juice over the flour mixture in the dish. If you prefer a drier cobbler, you can drain some of the liquid before adding.
  5. Top Batter and Sugar: Sprinkle the remaining flour mixture over the peaches, then add the remaining 2 tablespoons of sugar on top. Drizzle the last 1/4 cup of melted butter evenly over the entire top layer. The mixture will look quite wet, but the flour will absorb the excess liquid as it bakes.
  6. Bake: Place the baking dish in the oven and bake for 40 to 45 minutes until the top is golden brown and bubbling.
  7. Rest: Remove the cobbler from the oven and let it sit for at least 5 minutes to set before serving.

Notes

  • Self-rising flour can be substituted by combining 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt if unavailable.
  • If you prefer the cobbler less sweet or less liquidy, drain some of the syrup from the canned peaches before adding.
