Ingredients

Chicken Skewers

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • Bamboo skewers (soaked in water for 30 minutes)

Honey Garlic Sauce

  • 1/4 cup butter
  • 4 cloves garlic, minced
  • 1/2 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water (60 ml)

Instructions

  1. Preheat the Grill/Oven: Preheat your grill to medium-high heat or, if using an oven, preheat it to 400°F (200°C) to ensure even cooking and develop a nice char or caramelization on the chicken.
  2. Prepare the Chicken: Thread the chicken cubes onto the soaked bamboo skewers, leaving a small space between each piece to promote even cooking and prevent steaming.
  3. Make the Honey Garlic Sauce: In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute. Whisk in the honey, apple cider vinegar, soy sauce, and brown sugar, then bring the mixture to a simmer. Dissolve the cornstarch in 1/4 cup (60 ml) of water and stir into the sauce. Continue cooking until thickened, about 2-3 minutes. Remove from heat and set aside.
  4. Cook the Chicken Skewers – Grill Method: Place the skewers on the preheated grill and cook for 5-7 minutes on each side, until the chicken is fully cooked through and develops a slight char. During the last few minutes, brush the honey garlic sauce over the chicken to glaze it.
  5. Cook the Chicken Skewers – Oven Method: Arrange skewers on a baking sheet lined with parchment paper. Bake for 20 minutes at 400°F (200°C). Brush the skewers with the honey garlic sauce and broil for an additional 2-3 minutes to get a glossy glaze on the chicken.
  6. Rest and Serve: Allow the skewers to rest for a few minutes after cooking to let the juices redistribute. Serve warm with extra honey garlic sauce on the side for dipping.

Notes

  • Soaking bamboo skewers in water for at least 30 minutes prevents them from burning on the grill or in the oven.
  • You can substitute chicken thighs for chicken breasts for a juicier result.
  • For a gluten-free version, use tamari or gluten-free soy sauce.
  • These skewers pair well with steamed rice or grilled vegetables.
  • Brush the sauce on the chicken towards the end of cooking to prevent burning the sugars in the sauce.
