Ingredients

Granola Cups

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 3-4 tbsp honey (adjust according to desired sweetness)
  • 1 tsp vanilla extract

Filling & Topping

  • 1 1/2 cups Greek yogurt
  • Berries of choice (for topping)

Instructions

  1. Prepare the granola dough: In a mixing bowl, combine oats, cinnamon, almond butter, honey, and vanilla extract. Mix until the ingredients form a sticky dough. If the mixture feels too dry, add a bit more almond butter and honey to achieve the proper consistency.
  2. Form the granola base: Line a muffin pan with muffin liners. Take a spoonful of the granola dough and press it firmly into the bottom of each muffin cup, creating a sturdy crust for the yogurt to rest on.
  3. Add yogurt and toppings: Spoon a generous amount of Greek yogurt on top of each granola base. Then, add your choice of fresh berries and sprinkle any remaining granola dough over the top for extra crunch.
  4. Freeze to set: Place the muffin pan in the freezer and allow the granola cups to set for at least 4 hours. Before serving, let them thaw slightly for a creamy and enjoyable texture.
