Ingredients

Main Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

Butter Mixture

  • ½ cup unsalted butter, melted
  • 1 ½ tablespoons dried onion soup mix

Au Jus Sauce

  • 1 packet au jus gravy mix
  • 3 cups water

Optional Garnish

  • Fresh chopped parsley

Instructions

  1. Caramelize Onions: In a large skillet over medium heat, melt 3 tablespoons of unsalted butter. Add the thinly sliced onion and coat in the butter. Cook, stirring occasionally, for about 12-15 minutes until the onions are soft and browned but not burnt.
  2. Season Onions: Add minced fresh thyme, kosher salt, and black pepper to the caramelized onions, stir to combine, then remove from heat and set aside.
  3. Prepare Rolls: Preheat your oven to 350°F (175°C). Without separating the rolls, slice them horizontally with a large knife to create tops and bottoms. Place the bottom halves, cut side up, into an 11×7-inch baking dish.
  4. Assemble Sliders: Layer half of the provolone cheese slices over the bottom rolls. Add the sliced roast beef evenly on top, followed by the caramelized onions. Then add the remaining cheese slices and place the tops of the rolls back on.
  5. Brush Butter Mixture: In a small bowl, mix the melted ½ cup unsalted butter with 1 ½ tablespoons dried onion soup mix. Brush this mixture evenly over the tops of the rolls to add flavor and ensure even browning.
  6. Bake Sliders: Cover the baking dish loosely with foil, ensuring it doesn’t touch the tops of the rolls. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5 minutes to brown the tops nicely.
  7. Prepare Au Jus: While the sliders bake, prepare the au jus gravy by mixing the packet with 3 cups of water according to package directions. Heat as needed.
  8. Serve: Garnish the sliders with fresh chopped parsley if desired. Serve warm with the au jus on the side for dipping.

Notes

  • Caramelizing the onions slowly over medium heat is key to developing deep flavor without burning.
  • Using sweet rolls adds a nice contrast to the savory beef and cheese.
  • Brush the butter and onion soup mixture evenly for consistent flavor and browning on top.
  • Au jus can be made from scratch using beef broth and seasonings if preferred.
  • Make sure to cover the sliders loosely with foil to avoid the topping sticking to the foil during baking.
  • These sliders are great for parties or game day and can be reheated gently without drying out.
