This Easy Dorito Casserole is a deliciously cheesy and flavorful layered dish combining ground beef, savory seasonings, and crunchy Nacho Cheese Doritos. Ingredients

Meat and Vegetables

  • 1 1/2 lbs ground beef (or ground turkey)
  • 1 large onion (finely diced)
  • 1 green bell pepper (finely diced)
  • 3 garlic cloves (minced)

Sauces and Seasonings

  • 1 cup red salsa
  • 3/4 cup salsa verde
  • 1 taco seasoning packet
  • 1/3 cup chicken stock
  • 10 3/4 oz cream of mushroom soup
  • 1 cup sour cream
  • 1 cup black beans (drained and rinsed)

Cheese and Chips

  • 3 cups Mexican cheese (shredded and divided)
  • 14 oz family sized Nacho Cheese Doritos (crushed into slightly smaller pieces)

  • Tomato (diced)

  • Sour cream (for garnish)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 13×9 inch casserole dish lightly with non-stick cooking spray to prevent sticking.
  2. Cook Meat and Vegetables: In a large skillet over medium heat, add the ground beef (or turkey), diced onion, bell pepper, and minced garlic. Cook until the meat is thoroughly browned and vegetables are tender. Drain excess fat from the skillet.
  3. Add Salsas and Seasonings: Stir in the red salsa, salsa verde, taco seasoning packet, and chicken stock. Cook this mixture for about 4-5 minutes, allowing the liquid to evaporate and the mixture to thicken slightly. Remove from heat.
  4. Mix Casserole Filling: In a large bowl, combine the cooked meat mixture with sour cream, black beans, cream of mushroom soup, and half of the shredded Mexican cheese. Fold all ingredients gently until well blended.
  5. Layer the Casserole: Spread about 2 cups of crushed Doritos evenly over the bottom of the prepared casserole dish. Top with half of the meat mixture. Repeat the layers by adding remaining meat mixture, then another 2 cups of crushed Doritos, and finally sprinkle with the remaining cheese.
  6. Bake Covered: Cover the casserole with non-stick foil and bake in the preheated oven for 30 minutes to heat through and meld flavors.
  7. Bake Uncovered: Remove the foil and continue baking uncovered until the cheese on top melts and starts to bubble, about 5-10 minutes more.
  8. Cool and Garnish: Let the casserole cool for 10 minutes before serving. Garnish with diced tomatoes, shredded lettuce, chopped cilantro, sliced olives, and a dollop of sour cream to enhance freshness and flavor.
