This Easy Cottage Cheese Alfredo is a creamy, healthier twist on traditional Alfredo sauce, blending smooth cottage cheese and parmesan for a rich and satisfying pasta dish that comes together in just 15 minutes.

  • 1/2 cup milk (any kind)
  • 1 1/4 cups cottage cheese (Good Culture whole milk or any percentage works)
  • 1 Tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 cup freshly grated parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Kosher salt and fresh cracked black pepper to taste
  • 1/2 cup pasta cooking water (as needed)

Instructions

  1. Blend the cottage cheese and milk: In a high speed blender, combine the milk and cottage cheese and blend until smooth and creamy, forming the base for your Alfredo sauce.
  2. Sauté the garlic: Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add cheese mixture and seasoning: Reduce the heat to low. Pour the blended cottage cheese mixture into the pan along with the parmesan cheese and Italian seasoning. Stir gently to mix the ingredients as the parmesan begins to melt.
  4. Cook sauce gently: Maintain the sauce over very low heat, stirring to ensure the parmesan fully melts without overheating. Avoid allowing the sauce to curdle by not raising the heat.
  5. Prepare pasta: Meanwhile, cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water before draining and rinse the noodles with cool water to stop cooking.
  6. Toss pasta with sauce: Return the sauce to low heat and mix in the drained pasta, adding reserved pasta water as needed to loosen the sauce. Heat gently to your preferred serving temperature, avoiding overheating to prevent sauce separation.

  • Use any type of milk you prefer, such as whole, 2%, or plant-based alternatives, depending on dietary preference.
