These Easy Corn Fritters are crispy, golden patties bursting with sweet corn flavor and fresh parsley, perfect as a snack or side dish. Ingredients

  • 2 cups corn kernels (grilled or toasted)
  • 1/3 cup yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt (or more to taste)
  • 1/2 teaspoon ground black pepper
  • Handful of parsley, finely chopped
  • 1/3 cup milk
  • Vegetable oil (for frying)

Instructions

  1. Grill or Toast the Corn: Heat an outdoor grill to high and grill the corn on the cob until charred and cooked. Let cool enough to handle, then cut the kernels off the cob. Alternatively, remove kernels from the cob first, then toast them in a pan over medium-high heat until golden brown, being careful as they may pop.
  2. Make the Batter: In a large bowl, whisk together cornmeal, flour, baking powder, kosher salt, black pepper, and chopped parsley. Add milk and stir thoroughly with a wooden spoon until a thick batter forms.
  3. Heat the Skillet: Warm a cast iron skillet over medium-high heat and add enough vegetable oil to coat the bottom for frying.
  4. Fry the Fritters: Using a 1/3 cup measuring cup or large cookie scoop, scoop the batter into the hot skillet. Gently press each mound to flatten it into a patty. Fry for about 5 minutes on one side until browned, then carefully flip and cook another 5 minutes until the second side is golden and cooked through. Remove from skillet and repeat with remaining batter.
  5. Serve Immediately: Plate the hot, crispy corn fritters and serve right away for the best taste and texture.
