These Easy Cheeseburger Bowls are a delicious low-carb twist on classic cheeseburgers, deconstructed into a hearty and flavorful salad bowl. Packed with seasoned ground beef, fresh veggies, shredded cheddar, and a zesty chipotle ranch dressing, this recipe is perfect for a quick and satisfying meal ready in just 25 minutes.

Ingredients

Chipotle Ranch Dressing

  • 1/2 cup mayonnaise
  • 1 tablespoon dry ranch powder dressing mix
  • 1 tablespoon Adobo Sauce from a small can of Chipotle Peppers in Adobo Sauce (The Goya brand is popular)
  • 1/4 cup milk (any milk works, preferably whole milk)

Ground Beef & Seasoning

  • 1 lb ground beef (85/15)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder

Bowl Ingredients

  • 1 large head of Romaine hearts or 2 smaller ones (about 4 cups), washed, dried and chopped
  • 4 ounces shredded cheddar cheese (about 1 cup grated)
  • 1 small red onion, sliced thinly
  • 1/2 cup dill pickle chips or 4 dill pickle spears, cut into bite sized pieces
  • 1-2 roma tomatoes, seeds removed and diced
  • 1 avocado, pit removed, peeled and diced

Instructions

  1. Make the Chipotle Ranch: In a large bowl, whisk together the mayonnaise and dry ranch powder dressing mix until thoroughly combined. Slowly add the milk and the adobo sauce, whisking continuously until the dressing is smooth and well mixed. Place the dressing in the refrigerator to chill and allow flavors to meld until ready to use.
  2. Cook the Ground Beef: Heat a large pot or Dutch oven over medium heat on the stovetop. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink. Sprinkle in the garlic powder, salt, ground cumin, and chili powder, stirring well to incorporate the spices evenly. Continue cooking until the beef is fully browned and flavorful. Turn off the heat and keep the pot covered to retain warmth.
  3. Assemble the Burger Bowls: On large bowls or plates, create a bed of chopped Romaine lettuce covering about half of the bowl’s surface. Spoon the warm seasoned ground beef on the other side. Arrange the shredded cheddar cheese, diced avocado, dill pickle pieces, diced tomatoes, and thinly sliced red onions around the bowl for easy access and visual appeal. Drizzle the chilled chipotle ranch dressing generously over the top or serve it on the side for dipping. Serve immediately and enjoy your deconstructed cheeseburger experience!
