Ingredients

Pasta and Meat

  • 16 oz rotini pasta
  • 1 lb ground beef
  • 1/3 cup water
  • 2 Tbsp taco seasoning

Vegetables

  • 2 large Roma tomatoes
  • 5 green onions
  • 1/4 head iceberg lettuce
  • 2 avocados
  • 15 oz can corn, drained
  • 15 oz can black beans, drained and rinsed

Other

  • 1 1/2 cups crushed Nacho Cheese Doritos
  • 16 oz bottle creamy French dressing

Instructions

  1. Cook the pasta: Bring a pot of water to a boil and cook the rotini pasta according to package instructions until al dente. Drain the pasta using a strainer and rinse it with cold water to cool it down and prevent sticking.
  2. Prepare the ground beef: Heat a skillet over medium heat. Add the ground beef and cook thoroughly, breaking it up as it cooks. Remove any excess grease from the pan. Stir in the taco seasoning and water, letting it simmer for a few minutes to allow the flavors to meld. Then, remove from heat and allow it to cool completely.
  3. Chop the vegetables: Dice the Roma tomatoes, slice the green onions, chop the iceberg lettuce, and dice the avocados into bite-sized pieces.
  4. Combine ingredients: In a large bowl, add the cooled pasta, cooled seasoned ground beef, chopped vegetables, drained corn, rinsed black beans, and crushed Nacho Cheese Doritos.
  5. Add dressing and mix: Pour the 16 oz bottle of creamy French dressing over the combined ingredients. Mix everything well to ensure even coating of the dressing.
  6. Serve or chill: Serve the pasta salad immediately for best taste and texture, or refrigerate until ready to serve to allow the flavors to blend further.
