  • 2 ¼ teaspoons active dry yeast (or 1 packet; instant yeast optional)
  • 2 tablespoons honey (can substitute sugar)
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • 1 large egg
  • 4 tablespoons unsalted butter (room temperature, cut into 4 cubes)
  • 3 ¼ cups (390 grams) all-purpose flour

  • 2 tablespoons salted butter (melted)
  • 1 tablespoon honey

Instructions

  1. Activate the yeast: Combine warm milk and yeast in the bowl of a stand mixer. Stir in 1 tablespoon honey. Cover with plastic wrap and let sit for 5-10 minutes until foamy on top, indicating yeast is activated.
  2. Mix dough ingredients: Add the remaining tablespoon of honey, cornstarch, salt, egg, butter, and one-third of the flour to the yeast mixture. Mix on low speed with the paddle attachment.
  3. Incorporate remaining flour: Gradually add the rest of the flour while mixing for about 30 seconds to combine.
  4. Knead with dough hook: Switch to the dough hook and beat on medium-low speed for 2 minutes. If dough is too sticky to handle, add 1 tablespoon flour at a time until workable but still slightly sticky (usually 5-6 tbsp added).
  5. Knead by hand in bowl: Dust hands with flour and knead dough in the bowl for 3 minutes to develop gluten and smooth texture.
  6. First rise: Scrape dough into a large, lightly greased bowl. Cover with plastic wrap and allow to rise in a warm place until doubled in size, about 1-2 hours depending on ambient temperature.
  7. Shape the rolls: Punch down the dough to release air. Divide and shape into 15 tight, smooth balls of equal size. Place in a lightly greased 9 x 13-inch baking dish.
  8. Second rise: Cover with plastic wrap and let the rolls rise in a warm place for 1 hour until doubled in size.
  9. Preheat oven: Heat oven to 375° F (190° C) while rolls undergo second rise.
  10. Bake first stage: Bake rolls for 18 minutes until lightly golden.
  11. Brush with honey butter: Mix melted butter and honey. Remove rolls from oven and brush tops with the honey butter mixture.
