Cinnamon Topping

  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/2 tsp cinnamon
  • 1 1/2 tbsp cold butter

Instructions

  1. Prepare the bread: Slice the loaf of bread into cubes and set aside.
  2. Grease the pan: Lightly grease a deep dish pie pan to prevent sticking, then arrange the bread cubes in a single layer inside the pan.
  3. Mix custard: In a mixing bowl, whisk together the milk, eggs, vanilla extract, brown sugar, and cinnamon until fully combined.
  4. Pour custard over bread: Evenly pour the custard mixture over the bread cubes, ensuring all pieces are soaked.
  5. Make the cinnamon topping: In a separate bowl, combine the brown sugar, flour, and cinnamon. Using your fingers, slowly cut in the cold butter until the mixture forms a crumbly texture. It is okay if it is not thoroughly blended at this stage.
  6. Add topping and chill: Sprinkle the cinnamon topping evenly over the soaking bread and custard. Cover the casserole with plastic wrap and refrigerate for at least one hour or up to overnight to let the custard set.
  7. Preheat oven and warm dish: Preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and allow it to sit at room temperature for 30 minutes to avoid thermal shock to the dish.
  8. Bake covered: Cover the casserole with aluminum foil and bake for 45 minutes in the preheated oven.
  9. Finish baking uncovered: Remove the foil and bake for an additional 15 minutes until the top is golden brown and the casserole is set. Test by poking a knife into the center; it should come out clean and the casserole should not appear wet.
