Ingredients

Pasta and Mix-ins

  • 16 ounces rotini pasta, cooked, drained, and rinsed in cool water
  • 2 cups whole dill pickles, diced (about 5 large pickles), with reserved juice
  • 1½ cups cheddar cheese, cubed (or Colby-jack cheese)
  • 1 to 2 tablespoons fresh dill, chopped

Dressing

  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon dried dill
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper

  • 2 tablespoons dill pickle juice

Instructions

  1. Make the dressing: In a small mixing bowl, whisk together mayonnaise, sour cream, dried dill, onion powder, black pepper, dried parsley, and dill pickle juice until smooth and well combined.
  2. Combine salad ingredients: In a large salad bowl, add the cooled rotini pasta, diced dill pickles, cubed cheddar cheese, fresh dill, and the prepared dressing. Ensure the pasta is fully cooled to prevent the cheese from melting.
  3. Mix the salad: Stir all ingredients gently but thoroughly until everything is evenly coated with the dressing.
  4. Chill the salad: Cover the bowl with plastic wrap and refrigerate for at least one hour to allow the flavors to blend and the salad to chill properly.
