Ingredients

Cucumbers

  • 2 English cucumbers, thinly sliced, peeled and deseeded if desired
  • 1 teaspoon salt + more to taste
  • 1/2 cup thinly sliced red onion

Dressing

  • 1/2 cup sour cream
  • 3 tablespoons everything bagel seasoning
  • 2 teaspoons white vinegar
  • 1/2 teaspoon black pepper + more to taste

Instructions

  1. Salt and Drain Cucumbers: Toss the thinly sliced cucumbers with 1 teaspoon of salt in a colander over the sink or in a bowl. Let them rest for 30 minutes to an hour to draw out excess moisture and enhance their texture.
  2. Rinse and Dry Cucumbers: After resting, gently rinse the cucumbers to remove excess salt. Then press the slices down with your hands or pat dry thoroughly with paper towels to remove as much moisture as possible.
  3. Prepare Dressing: In a bowl, mix together the sour cream, everything bagel seasoning, white vinegar, and black pepper until well combined and smooth.
  4. Combine Salad: Add the drained cucumbers and thinly sliced red onions to the dressing. Toss everything together until evenly coated. Season with additional salt and pepper to taste.
