A hearty and comforting Crock Pot French Onion Beef and Potatoes recipe featuring tender ground beef, baby gold potatoes, and a rich French onion soup gravy, slow-cooked to perfection and topped with melted provolone cheese and fresh parsley.

Ingredients

Meat and Vegetables

  • 1 ½ pounds ground beef
  • ½ cup diced onion
  • pounds baby gold potatoes, halved

Seasonings and Soup Mix

  • 1 teaspoon salt (optional)
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 10.5 ounce can French onion soup (undiluted)
  • 1 packet onion soup mix
  • 1 cup beef broth (can use low or no sodium)

Thickener and Toppings

  • 1 Tablespoon cornstarch
  • 2 Tablespoons water
  • 4 slices provolone cheese
  • Chopped parsley (optional, for garnish)

Instructions

  1. Cook the Ground Beef and Onions: In a skillet over medium heat, cook and crumble the ground beef until brown and fully cooked. If you prefer very soft onions, add the diced onion to the skillet and cook with the beef.
  2. Transfer to Slow Cooker: Add the cooked ground beef and onions to a 6-quart slow cooker.
  3. Add Potatoes: Place the halved baby gold potatoes into the slow cooker with the beef and onions.
  4. Prepare Soup Mixture: In a bowl, combine salt, black pepper, garlic powder, French onion soup (undiluted), onion soup mix, and beef broth, stirring until well mixed.
  5. Pour and Stir: Pour the soup mixture over the beef and potatoes in the slow cooker and stir everything gently to combine.
  6. Slow Cook: Cover the slow cooker and cook on low heat for 4 to 5 hours until the potatoes are fork tender.
  7. Make Gravy Thicker: In a small bowl, whisk cornstarch and water until smooth, then stir this mixture into the slow cooker contents.
  8. Cook to Thicken Sauce: Cover and cook on high for an additional 10 to 15 minutes until the sauce thickens into a rich gravy.
  9. Coat Potatoes: Stir gently before serving so the potatoes are nicely coated in the thickened gravy.
  10. Add Cheese and Melt: Lay the provolone cheese slices on top, cover the slow cooker, and allow the cheese to melt.
  11. Garnish and Serve: Sprinkle chopped parsley on top for garnish and serve immediately. Enjoy!

Notes

  • Using low or no sodium beef broth helps control the saltiness of the dish.
  • If you prefer softer onions, cook diced onions with the ground beef at the start.
  • The cornstarch slurry is key for thickening the gravy to a rich consistency.
  • Provolone cheese adds creamy texture and mild flavor; feel free to substitute with mozzarella or Swiss if preferred.
  • Garnish with fresh parsley for added color and a subtle fresh note.
