Coating and Seasoning

  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Chili Powder (or paprika)

Instructions

  1. Prepare the chicken: Cut the chicken breasts into cutlets or fillets. Using a meat mallet or rolling pin, gently pound any thick parts to ensure the pieces have an even thickness for uniform cooking.
  2. Season the chicken: In a small bowl, mix together the oil, 1/4 teaspoon salt, and 1/2 teaspoon pepper. Coat each chicken piece thoroughly with this mixture to enhance flavor and help the breadcrumb mixture stick.
  3. Prepare the coating: In a separate mixing bowl, combine the fine breadcrumbs, flour, garlic powder, onion powder, dried thyme, dried basil, 1/2 teaspoon salt, and chili powder or paprika. This mixture will give the chicken its crispy and flavorful crust.
  4. Coat the chicken: One at a time, press each coated chicken piece into the breadcrumb mixture, making sure to gently press so the coating sticks well. Flip and repeat on the other side to ensure an even crust.
  5. Arrange in Air Fryer: Place the coated chicken breasts spaced slightly apart on the air fryer’s inner tray. This spacing allows the hot air to circulate around the chicken for even crisping.
  6. Cook: Set the air fryer to 200°C (390°F). Cook the chicken for 8-9 minutes, then flip each piece and cook for an additional 4 minutes. The chicken should be golden brown and cooked through.
  7. Rest and serve: Remove the chicken from the air fryer and let it rest for 5 minutes before slicing. Resting helps retain juices and improves texture for serving.
