Shrimp

  • 1 pound shrimp (31-40 count size, thawed & peeled, tails optional)

Sauce & Vegetables

  • 2 tablespoons butter
  • 1 teaspoon flour
  • 4-5 cloves garlic (minced)
  • 1 cup heavy/whipping cream
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup chopped or julienned sun-dried tomatoes
  • 1-2 cups (packed) fresh baby spinach
  • Handful fresh basil (cut into thin strips)
  • Salt & pepper (to taste)

Instructions

  1. Prep the shrimp: If using frozen shrimp, thaw them by placing in a colander and running under cool water until completely thawed and drained.
  2. Make the roux: Melt the butter in a large skillet over medium-high heat. Sprinkle in the flour and cook for about a minute while stirring to create a smooth base for the sauce.
  3. Add garlic: Stir in the minced garlic and cook for approximately 30 seconds until fragrant, being careful not to burn it.
  4. Build the sauce: Pour in the heavy cream along with the lemon juice, Italian seasoning, and sun-dried tomatoes. Bring the mixture to a gentle simmer for 2 minutes, reducing heat if the sauce bubbles too vigorously.
  5. Cook the shrimp: Add the shrimp to the skillet and cook for about 5 minutes, until they turn pink and opaque and the sauce thickens slightly. Avoid overcooking the shrimp to keep them tender.
  6. Add greens and herbs: Stir in the fresh baby spinach and basil, cooking for an additional 2 minutes until the spinach wilts and the flavors meld. Season the dish with salt and pepper to taste. Optionally, finish with a squeeze of fresh lemon juice or a sprinkle of grated parmesan cheese before serving.
